the maple syrup guy gave me one of his catalogs where he buys parts, etc. i wanted to see what kind of filters systems they have 4 sale, etc. in this book i got to see just what they do to produce maple syrup and i am more convinced than ever to never buy commerical produced syrup.
they add chemicals to absorb the minerals that make the syrup darker, these minerals and chemicals are then filtered and the really rich guys use multi thousand dollar reverse osmosis machines to even take more of the minerals out.
what is awrong with these guys??????????? it is the minerals that makes maple syrup what it is, by the time they get done with it, they have sugar water.
the local guy that makes my syrup unfiltered and leaves all the minerals in, is old time, nothing fancy and does it as a hobby only. it would cost him many thousands to modernize. in ohio they tried to force all the maplesrup farms to modernize and they realized it would put 90% of them out of business, because you just can't make a living making maple syrup the good way.
i will try to carry the sorghum and maple syrup each season to provide a sample of the way it use to be in this country! people do not realize how fast our food is being changed for the bad!
