Too much Wolff–Chaikoff effect, bromine didn't have this issue..

Since this was and still is the 'Gold' standard study it would have been litigious to continue the use of Iodine in flour:

EDIT
I would look into Newspapers, we still had those back then. When the NWO makes rules that can't be enforced by laws they don't like to leave a trail. But the newspapers of the day will have had at least some public explanation in the form of pablum..
