Rice bran is not a problem. It's a very good prebiotic so it helps to grow your good flora, which is how you're going to win in the long run. It also contains things like IP-6 and B vitamins. For maximum nutrient content don't buy the "stabilized" kind.
You used the phrase "healthy grains and flours." IMO, if you're battling candida there's no such thing as a healthy flour. Even coconut flour, though it comes from a fruit which has antifungal properties, once it's pulverized into flour feeds candida better than it feeds your good flora.
As you move on down the road keep an eye on the grains, make sure they really agree w/ you. More and more people and groups of people are discovering they do better on a diet w/ little or no grains, for various reasons (gluten, copper imbalance, etc.).
