I've been off wheat for a little more than a week...
...And the change was instant...right from the first day.
Small changes pile on me daily.
A couple or three times I have felt there must be some kind of 'detox' period after a lifetime of bread, wheat cereal, and baked goods. But the 'detox' feelings soon subside.
I was also finishing off a very expensive loaf of spelt bread when I began.
I haven't yet read Dr. Davis' book, except the recipe for Apple Walnut "Bread" on page 257. We have made it three times.
(For some reason ours turns out to be a sloppyish batter and we must cut down on the moisture. I also would like to try sprouting the new almonds we bought. I heard that the almond growers were going to heat the nuts, for some reason...maybe because they didn't want anyone else growing almond trees. Of course, there are always questions about when the nuts were grown, irradiation crossing borders, etc. Our local retailers could provide much more information than they do, especially now that the prices are right up there.)
My need for water, and food, reduced instantly. Constipation reduces slowly. 'Stinging' is reduced and the need to urinate is less often.
I am easily full when I eat, though I have a good appetite.
There is no change on my bathroom scales, yet. I weigh very casually.
My best improvements came today...I walk with less wobbling...as though I am well grounded. (Stroke in 2009.)
Most of all, from the start, I felt joy and certainty that I can be well.
My reasoning is this...if I feel a change instantly, then this must be an effective way for everyone, don't you think?
Oh, I know it could be a placebo effect, or wishful thinking, or something, but if others try it and find the same, it is far more likely to be true.
I find myself looking at others problems and wonder how much their difficulties would improve if they simply did without wheat goods.
I have also wondered about other grains. We have had oats once or twice, and brown rice tonight, but, so far, haven't noticed any ill effects.
