I could've written your post! I have gone on-and-off the low-carb wagon so many times I've lost count. My problem is that I strictly do it to feel better. I don't need or want to lose any weight so there isn't any motivation there. I WOULD like to live instead of simply exist, which is what I feel like I'm doing when I eat Sugar and carbs. Wanting to feel alive should be motivation enough, you'd think! Here are some things that work for me. I'm convinced that some of us, myself included, are genetically predisposed to candida issues but I still need to be better about my diet. I never drink soda and I stick to water except for my two cups of coffee in the morning. As far as supplements, I really like one called Candida Clear by NOW and also YST Management by NSI. I take probiotics that I got from Costco. They seem to help as much as anything else. The Candida Clear gives me wicked die-off symptoms (suffering from a bad headache because of it as I'm writing this!) but that means it's working! I take one teaspoon of psyllium and liquid Bentonite in the morning before breakfast with 2 cups of water. It helps clear out toxins and keeps things moving in your digestive tract and I think it helps with die-off. Grains are my downfall and they literally make me feel ill if I eat them, especially wheat. Brown rice is the least of the offenders but even then, any more than half a cup, and I feel sick and lethargic.

You should look into the Paleo Diet. It is grain-free and is mostly meat and veggies with some fruits (you could cut down on them if you need to). The theory is that you eat as our ancestors did and as we are designed to eat. Humans just weren't designed to eat so much processed grains and Sugar and, judging by the obesity and diabetes epidemics, we show no signs of adapting to it! There are some great blogs dedicated to the Paleo Diet. Some that I like are Paleo Parents, The Clothes Make the Girl, and Elana's Pantry. The last one isn't necessarily Paleo but it is low-carb and she bakes with almond flour and coconut flour. If you're going to have a low-carb treat, that is the way to go, in my opinion. I eat a lot of salads, wild fish, eggs, meat, etc. I do eat some dairy such as plain kefir and Greek yogurt, which are NOT allowed on the Paleo Diet. Maybe I will cut them out but I'm not ready to do it right now and I don't THINK they aggravate the candida.

Sorry to ramble on. You're not alone in your fight against candida. Hope you find something that works for you!
