The reason you gain all the weight back post-fast is because you don't have a proper diet pre-fast. Therefore, after the fast you don't know how, or what, to eat.
I'd suggest you eat a simple cooked Vegetarian Diet to start. You may, over time, improve that to a cooked Vegan Diet, adding more and more raw foods as the years go by. The ultimate diet is a 100% Raw Vegan Diet (IMO). There is much controversy on Diet. Find one that suits you, and stick to it.
