Your goals are quite admirable, but try and stick to one day at a time; aiming for a 21 day fast can seem very daunting; a bit like having a huge huge meal piled high before you on one plate, and then giving up before even starting.
Juice (feasting) is better for weightloss than water-only fasting as the latter will lower your metabolism by two fifths to one quarter and less calories are therefore consumed; this is done instinctively by the body in its efforts to preserve food reserves for as long as possible in order to stave off eventual starvation.

With juice-feasting however, the body is still being fed from external sources and the body will not then instinctively lower its metabolic rate. You will therefore consume more calories in the process and lose more weight: especially so if you are physically active.

More weight is lost in the beginning for the majority.
If you have hard fat deposits then you will lose less weight than if these deposits were of the soft-tissue kind.
Exercise and activity generally on liquids has a strong bearing on weightloss.
Anxiety/Stress/emotional involvement can play a significant role as well.
Generally you will lose approx' one pound per day after the initial weightloss in the first few days. As a conservative estimate, you will lose about 24 to 26
pounds if resting over that time-frame and more than that if you are active, or any of the others I have listed above.
