EDIT: Re: starting water fast
jojo18,
in answer to your apprehension on your vitamin & mineral status during your fast.

A diet that excludes any or very little Vitamin C will result in the disease known as Scurvy, but on a water-only-fast for anything up to 40 days and beyond, scurvy will not develop.
The body will conserve its resources as a matter of an innate instinct, and this includes its stores of both minerals and vitamins. Deficiencies in electrolytes can only occur at the latter end of a protracted fast and in my own case not at all, with two fasts of 25 days and then 30 days on water only.
Of course exercise/activity on a fast will use up these resources more quickly, but even then deficiencies are very rare even on the most protracted fast.
Supplementation is therefore considered to be superfluous, and will even fool the body into thinking it is on a diet, and therefore deficiencies of other essential foods such as essential fatty acids, and other nutritional elements are more likely to occur. In addition, full ketosis is avoided and this will reduce the elimination of toxins being one of the prime goals of the body during a water-only-fast.
My advice is not to supplement at all, but that choice is yours of course.
