Excellent recipe, I also like experimenting with different sugars, like Sugar cane juice, or palm sugar, gives a whole different flavour.

The "bug" is much the same as the ginger plant, but uses fresh ginger, instead of ground ginger. I'm going to give it a go with the fresh ginger, sounds great.

I've had a lot of contact with Buddhist Monks in my life, growing up in Asia, we would give food to the Monks, when they came everyday to the house. I have a lot of respect for them, and their beliefs, and have learned a great deal from my Buddhist friends over the years. I learned to forgive, and this has saved my life :)
