You know that I agree with you entirely. My training as a Biomedical Engineer tells me that Stainless is a poor choice due to the presence of Chromium and Nickel which are both tissue irritants and are carcinogenic.

It is simple to use paper towels to keep the copper off of the skin.

If I were to choose an optimum metal, I would consider silver for its additional benefits. Even then, it is important to avoid excesses of anything.
