Sounds like a pretty classic hypoglycemic reactions from adrenal fatigue. Car travel, walking, noise, and people interactions can all be stressful. However, I think the primary cause is your low carbohydrate diet. AF people don't metabolize blood glucose well due to low cortisol, so the primary source is from easily digestible foods. So while eating grass fed beef (excellent choice) is good for protein and fat consumption, it is NOT an adequate choice when you need some extra blood glucose for an activity.
Every person is different so I can only tell you the meals that work best for me: I cook up a brown & wild rice combo, enough to last several days. Then I combine that with a protein - eggs, chicken, fish, beef (or wild game, I'm in Montana). I usually throw some greens on top and some salad dressing for extra fat. I find the brown rice to be a good blood
Sugar stabilizer. I compliment that with apples - sometimes before I start an activity and afterwards - in fact after some strenous activity I'll eat a couple apples. I also eat almond butter and apple butter sandwiches on whole wheat bread or Ezekial sprouted grain bread. I have also found popcorn with real butter to be a good snack. Quinoa is a good substitute for rice. I don't have any problems with dairy or wheat, so that makes my food choices easier - you'll have to make choices appropriately - but overall added more carbs sounds like it would be helpful until your adrenals have recovered.
You didn't mention if you were taking the vit C & B-5 supplements i.e. the Lam protocol?
