Thanks for the reminder on the cilantro pesto. I'm doing the raw food thing these days and have been making the regular pesto with basil and have also done it with Arrugula. I always include cilantro in my daily green juice but for a different taste treat I'm gonna make the cilantro pesto.
Pesto is traditionally used over pasta but being in this raw food phase I don't eat noodles so what I do is take a zuchini and some carrots and take one of thoses handy dandy tater peelers and make a buncha strips which I then cut with a knife into smaller strips and voila raw pasta.
