i haven't read it yet, but will. it makes sense to me too, i once had a bio-feedback experience that taught me quite a lesson.
in my early 20's i tried the atkins diet and after 3 month of serious ketosis and not knowing anything about insulin i ate a whole bag of freshly baked cookies while walking down the street. within 15 minutes i started to become weirdly somnolent! scary. had to sit down real fast. later i learned about hyper-glycemia. the cookie carbohydrates had flooded more glucose into my blood stream than my sleepy (lo carb) pancreas could possibly handle and i was on the verge of diabetic coma! i didn't have enough insulin to distribute all the sugar, and it hit my keto brain with a bang. fortunately within a few minutes the pancreas chugged into gear and distributed my glucose overdose into the cells, liver and bladder and i was fine. but from that day on i had a LOT more respect for those little islets of langerhans, yesiree and have always converted from a fat burning metabolism to glucose burning v-e-r-y slowly ever since with either no carbs for a few days or low glycemic foods as you have.
i also enter a fast that way so i'm not hungry for long (altho for me hunger never completely vanishes during a fast no matter how long.
P.S. please don't think i'm weirdly fixated on corresponding 'only' to you nothingbetter, i can assure you i'm not. its just that occasionally you have touched on subjects that inspired me to share my own experiences with the whole forum.
