Good question!
It is NOT just for the taste, that is a fact.
It serves very important role in a flush process.
If you study different methods of flushing, you will see, that in all of them, there is usually one substance that causes same reaction as it enters your stomach.
Some protocols uses lemon or grapefruit juice, some uses coke or apple juice.
So what is common with these?
They are all acid (low PH). So is olive oil, PH around 5.
Overload of acid substance in stomach needs to be neutralised before it enters your small intestine, causing your GB and liver to work wery hard. That is what drives garbage out as well from there.
(small intestine PH should be between 7-7.5 in normal conditions.
By the way alcohol works similar way!
If you drink too much alcohol (PH also low), it may causes you to vomit, or if that did't happen, the stomach will store it until it is all neutralized by liver enzymes and let tru to intestine.
If you drink a class of water the next morning after heavy intake of alcohol on previous night you can get drunk again from remaining stored qty. as it is diluted to higher PH, in other words neutralized enough.
