I eat mine too. Lots of people do. But they are a bit rubbery! Or make them into icecream. This works really well. If you liquidise the grains they become very thick and creamy. I make a simple icecream with double the amount of fresh fruit puree to kefir. I put Sugar syrup in the fruit puree but I guess you can add Sugar to your taste (or not)
