Add 1/4 cup Sugar and 2 cups spring water. Let Sugar dissolve.
Add 1 cup water kefir crystals.
Top off with water to about 3/4th inch from top of jar.
If you like, before you top of the jar, add a slice of lemon, or a piece of dried fruit such as fig, apple, candied ginger, etc. Just make sure the fruit is organic so you don't get the sulfur that will kill the kefir.
