freezing will kill some of the bacteria, but not all of it. You could saw that out and eat it raw and still get some beneficial bacteria

The Westin Price foundation has great info on fermented foods

Are you familiar with kvass? This is a wonderful detox and digestive aid and very easy to make. I have a really great recipe for it if you are interested. You can google it, but the traditional Russian method uses yeast which creates a very slightly alcoholic beverage which is not something I am interested in
