How would you feel about moving to a commune? You could probably get a gluten free diet there (don't know exactly for sure, you'd have to look into that) since the commune I'm thinking of is striving to be self-sufficient and grows a lot of their own stuff. The stress would be minimal, since you've got a roof over your head and food to eat. But they'd expect you to put in a full day's work to contribute to the community. There are many ways for you to do that, I'm sure. In the process learn a new skill: soap making, cheese making,...etc.. Then, you'd have the evenings free to write. When the novel's done, and you've got an agent, you can move on.

This one is in Virginia. I've never been there. I only know about it because the Washington Post did an article on it a few years back.
