there is also a wrinkle to the 1300's plagues of europe story that makes sense.and fits into your post,which knowing you, you are already aware of.

around 1300 was also the time in europe when they shifted from the goat to the cow and its 4-7x gluten content (compared to goat)

we all know the effect gluten has on some people's duodenum-the heart of our immune system-where we get most of our nutients.and probably the part of us most healed by fasting and diet change-natural hygiene.

i believe us of european descent(sometimes thats hard to admit,chris,for a variety of reasons) are the descendants of people not real gluten intolerant.cause the most intolerant ones all died in 1300 and had no children.but it continues to plague(sorry) us to some extent.

the latest estimates are 1 in 22 extremely gluten intolerant.and many more affected to varing degrees. there is a natural vet in illinois that has cured 95% of his epileptic dogs with no gluten diet.
