We have softer water where I live, getting the supply literally from the side of Pikes Peak runoff, so the mineral content is lesser. Not like lower elevations where this experiment would have been more pronounced.

Still, I found what you said: true. The negative pole was smoother. Positive pole was as you said, sharper. I could taste the difference. You are right, sir.
