I think for all of us first starting out, we use the recommended amounts and it does tend to be more acidic.

I don't think that is necessarily a bad thing. I would think many of us may have low stomach acids, which is part of the reason we don't digest our foods well. This may help us as we start the process of building alkaline reserves.

In time as you feel the need to up the tablespoons of limewater, the pH will go up in your drink and your own digestion will be already getting healthier and be able to take in a little more alkaline minerals without overwhelming the balance.

At least that is the way it seemed to work for me.
