Book for mold free diet?

I have Candida and need to avoid mold & fermented foods.

Can anyone suggest a good book for people who need to avoid dietary mold?

Most of the books I've seen either focus on mold in your house, or are general books on allergies.

Or, if there's an online resource, that would be great too!
