Aside: about cumin...
...I love a small amount of cumin in potato salad.
Such a nice 'round' flavor.
I am also a fan of lots of hard-boiled eggs in a potato salad...as many as six in the biggest bowl of my set.
I feel the cumin adds to the flavor of the eggs.
We have recently begun adding a small drizzle of olive oil, too, with the mayonnaise, and dh doesn't know that I also put in a squirt of fresh lemon juice, as I would with olive oil on a green salad...not too much.
That, I think, also sours the half cup of milk he likes to put in.
However, we are still working on the size we cut the potatoes. He likes a fairly big piece, but I am not that fond of potato chunks...too bland...so, I mash with a fork in my dish.
It isn't potato salad, to my mind, without celery, onions (green, or white in a pinch), and garlic...another 'round' taste, to me.
I have also added a bit of finely minced ginger...and even a sprinkle of curry powder, a couple of times.
Finely grated carrots add color and flavor...as do chopped radishes.
Lately I have a tooth problem, so I put 1/4 to 1/2 cp of milk in a blender, add my portion of potato salad, and 'pulse' a few times.
It is some work to get all the salad out of the blender with a rubber spatula, but the smooth mixture is every bit as tasty as the lumpy. Very satisfying.
There is a very fine mango/ginger chutney at our health food store. I've found I like some of this on the side.

Oh yes, I usually try to add a spoonful of coconut oil to the hot, chopped potatoes...even just warm potatoes. Coconut oil melts so easily, and adds a certain delicate silkiness.
Turmeric is good, too...and so good for us.

Pickle bits, or a little juice
Most anything, including sweet potatoes, or yams.
