the moreless post you linked did bring up the hydrogen issue which I did not address, but to suggest that dehydrating produce removes the hydrogen but leaves the oxygen is absurd, that does not happen. Key nutrients, like vitamins C, E and A, remain somewhat stable in the dehydrated food because they do not get oxidized, due to the oxygen being removed during the dehydration process.
