wow, that's a great question and i've got to think about that.

i've heard a few raw foodist talk a bit on the enzyme theories of being raw...i must find more on this. jameth sheridan a naturopath and long time raw foodist...i heard a radio interview with him just a couple months ago, he was asked if enzymes were the most important criteria to define the health benefits of raw...he said, in his opinion, no...what's most healthful in raw foods is the whole food aspect unaltered as much as possible. going by just enzyme vitality is too narrow. he also said, for most people, just going to a whole foods vegan diet will bring remarkable health benefit. going to raw foods even more...now if i can only remember the rest of why he said it wasn't enzymes. lol. i'll see what else i can find....
