I've been making sauerkraut and eating at least 1/2 cup per meal for the past 3 weeks, as well as making kefir. I followed the program in Donna Gates' book The Body Ecology Diet. I ordered the cultures (powder in packets) from her website. It takes 2-3 months to see a real difference, she says, but in 2 weeks you may notice an improvement. After just 2 weeks on the diet, I was able to digest chlorella tablets, which are important for me to remove heavy metals and help clean out the bowels. To make sauerkraut, you need a food processor to make it easier. I made it in quart mason jars, which works out great. The only trouble with buying sauerkraut, is that it is hard to afford the quantities that are necessary to do the job. Hope this helps.
