Bitters and stomach acid

My understanding of bitters is that they stimulate the production of the hormone gastrin in the stomach rather than stomach acid. Gatrin and the closely related hormone cholecystokinin which stimulates the production of bile.

Of all the bitter foods/herbs dandelion is my favourite because it has the ability to cause the spontaneous full contraction of the gallbladder.
