I am so glad you are on the road to be more healthy and congradulate you. But flax seed should be eaten within ten minutes of grinding. The oil is ok for a longer period of time but once the sun hits it becomes a little more less viable. Never buy oil that is not in a dark bottle and should always be refrigerated.

Cottage cheese can be exchanged with yogurt which is what I use. I take regular yogurt and drain the whey off which is what Budwig did. It becomes a cheese like substance and you then add water back into it to make it a little more juicier to mix in the flax seeds.

You can make a smoothie like you stated and sounds real delicious. You do not need the oil. 1 T. of oil can be substituted by 2.5 T. of flax seeds. What I do is I make my smoothie and then grind the seeds and pour the smoothie in a glass and then I heap the seeds on top of the smoothie so I spoon it out like I had a crunch on top. It is real delicious that way. You can do much better by changing to yogurt. Budwig's cottage cheese was more of a yogurt cheese without the liquid (whey) and not at all like the cottage cheese in the stores.
