I have an EXCELLENT roast chicken recipe. I make a stuffing out of Lightly sauteed cauliflower, onion, celery, carrot, mushrooms, marjoram, sage, etc. Cauliflower is an excellent substitute for bread. Stuff the chicken, sew it up to seal. Put into oven pre-heated to 500. yep, 500! Turn down to 350 after around 5 mins or so. The initial high heat is enough to ensure a crispy skin, the stuffing keeps the interior moist and delectable, even the breast meat.
