The following information was compiled from a newsletter that I subscribe to. I hope it might help you and your children.

Celiac disease is caused when one cannot digest gluten. Gluten is a vegetable protein that is mostly in wheat but it can also be found in barley, beans, oats, rye and turnips. Celiac disease causes diarrhea and malnutrition. Wheat can also cause blood Sugar problems, bad cholesterol problems, allergies, high triglycerides, maldigestion, chronic sinusitis and even snoring. One could also suffer from chronic fatigue syndrome, Rheumatoid Arthritis , fibromyalgia, polymyalgia, MS, Parkinson's, ALS or arthritis. Wheat may not be the cause of these, but they could make those conditions worse.
Most often wheat products that are consumed are refined products. Even whole grain foods bought in health food store are probably refined. If it does not mentioned that the grains are not 100% whole grains it is more than likely a refined product.
Wheat can also be a problem for A, B, and O blood types.
A recommended suggestion would be to go on a 30 day gluten free diet and see what happens to the above mentioned problems.

My comment to the 100% whole grain comment above.
If I buy bread I always look for one that says it is made from sprouted 100% ORGANIC whole grains. If it has soy products in it I will not buy it. I have read that if the grains are not sprouted, they are harder if not impossible to digest.

I found a good site at http://www.niddk.nih.gov/health/digest/pubs/celiac/#1 that has some more information on celiac disease.

If Ptree reads this maybe she could comment on psyllium if it does or does not have gluten in it since it is a fiber product. I do not know myself.
