Hi Evan,

Your question: Moreless,

You have mentioned Cinnamon in numerous posts as an alkalyzing spice. Are you referring to true Cinnamon (C. zeylanicum) or Cassia (Cinnamomum aromaticum). Most of what is sold as cinnamon in the U.S. is a related plant called Cassia. This is used to treat a lot of illnesses in China.

True Cinnamon is a more expensive and more difficult to find. I have a feeling that both are beneficial but do you know which may be best?

Answer: Cassia may be what most of the Cinnamon is that is imported into the USA !

Cinnamon: Laurus Cinnamonum may have been Orginally grown in Ceylon, but now it is grown in many other areas of the world and may be considered Superior to the Cassia?

And many other names may be used to identify the Different areas it may be grown in?

Yet, the Cassia Cinnamon may be what is most widely available?

Thus it may be like any-other foods, depending upon their Quality and where they have been grown, as to what the end results may be obtained from them?

But, I was refering to Cinnamon in the Generic terminology, of which what ever the best Quality with the Highest oil content may provide for the Best Cinnamon, per say, regardless of the area grown or the name given?
