How do I sprout my Mung beans to produce those straight things they use in chinese cooking?

I don't nee them long but I would like them straighter. Mine end up being a curly mass that it is hard to get rid of the skins from.

Are the skins edible. I hear that the compounds that protect the seed from fungus etc aren't so good for you?

Anyone? Thanks
