I recently saw a PBS Nova special about the Mofu people of Cameroon who use killer ants to protect their homes from termites. Also, a large part of their diet consists of insects. This got me to wondering if vegetarians would include edible insects in their diet if they could overcome the "ickiness" factor of our western culture.
A little internet research that I've done indicates that edible insects offer high quality nutrition without the negative impact on the earth that raising animals for slaughter does.
