I'm from Belgium and sometimes eat baked chitterlings. It's a dish that I remember from my childhood and I like the crispy taste, although I don't know that many other people who eat them. They were much more popular in the time of my grand parents and great grand parents, when many people from the countryside used to raise their own pig. Most Belgian butchers still sell them though.
In neighbouring France, sausages made from pig intestines are rather popular.
