Spelt is a member of the triticum family of grasses and it is wheat.But no need to split hairs on species and whatnot.I actually prefer barley myself it grows well and has a great yield.In the healing retreats of hippocrates youll find sprouting used heavily mainly wheat,sunflower and buckwheat.When you say soilless what does that mean?I use a growing medium of soil augments and recycled flats.I use a basic 9-21inch sprouting trays which can be purchased at greenhouses for 1.00-3.00 bucks.You can save some money by buying the trays without holes and punching them yourself.I have pictures of my sprouts in the Image Gallery in the photos section under grassmans sprouts.I use 3 4tier growracks for production reasons,1 inside for inital sprouting and 2 outside to finish off the sprouts.The racks save space and keep things organized which is helpfull as far as a continual supply of grass juice goes.I try to have 2 trays of grass coming to harvest every 3-4 days.I only do this during the spring and fall I get tired of grass juice quickly.I have 4 trays started now that spring is finally here 2 barley and 2 baby black oil sunflower.Good luck and happy sprouting.Jeff.
