Organic? Non GMO Soy Question

Hi Doc,
I understand your position on the commercial soy processing and also soybeans having the digestive inhibitor in them. Would you be willing to explain why we can't make our own soy milk from non GMO soy beans? It was my understanding that heating the beans destroyed the digestive inhibitor. I have made lots of my own soymilk in the past.
Also, if a lecithin container says "organic", is the soy safe to use? I get a lot of stuff from mountainrose herbs.
My question is in relation to the nattokinase that comes from the soybeans. This is suppose to be an arterial cleaner? I know it has been separated from the beans, and is supposed to do this. I also know that lecithin is used for this.
I am not clear on the subject. I just want to understand, and don't mean to be argumentative.
Thanks for your consideration.
