Here is what I decided to do, and it has worked well for me so far:
Go by the "Alkaline Ash" designation. Alkaline Ash means that, after combustion, the food leaves ash, or residue, which has an alkaline pH. IOW, after your body has burned that food up, you will be left with an alkaline residue. Other foods leave an acid ash, and those will be the ones which impact your body's alkaline reserves most strongly.
This will free you up from the lists where folks are simply testing undigested foods with a pH tester, and I think may remove some confusion.
Chicken vs. beef, I think that will more likely be an individual effect, because rare beef is far more alkaline than well-done.
Still, after all that, it is true that your body's individual response to certain foods is bound to be different somewhere, so the pH strips will help you out with determining your body's particular response.
Then there is the factor of electromagnetic energy-- what your cells use to communicate and accomplish their individual functions. Electromagnetic energy requires *both* alkaline and acid present at the same time to produce this energy, the acids and alkalines work 'against' each other, and that 'friction' results in electromagnetic energy. Your body needs a bunch of this to live, and *a lot more* to detox.
Lastly, your body's preferences and food responses may change as your state of health improves, or as your toxic load diminishes, or as environmental or dietary faux-pas occur which need to be dealt with, or as it simply cycles through its necessary complex functions.
Testing your system's responses with the pH strips will keep you informed, until you can get the data just "by feel".
I initially plowed through ~200 pH strips, until I got more confident that I had somewhat of a handle on what was going on.
Testing urine and saliva *both*, first in the AM is key.
Use the *ash lists* as a starting place. Gear your thinking toward building up a strong alkaline reserve.
