I have made both chicken and beef broth with the bones -- thanks for the word on the chicken broth -- Nourishing Traditions talks about putting the whole chicken in and, after a day or simmering, I don't like the meat at all; so, I will cook it and then use the bones.
I, too, have used that broth in soups and gravies and what a difference it makes -- loads of body and a smattering of love, methinks?
