once it is heated to a certain temp, it outgasses, you can bet on it. thats how they get it out of phosphorus to begin with, by heating it. look at any used teflon pan and you will see discoloration on the bottom. that means the members of the household who were cooking with it are dosed. it also means that if they were keeping birds at the time, they are likely dead. i think it only takes once to break it down and then it takes even lower temps to continue the process.

without heat, the coating itself is fairly resistant to chemicals. i cant think of anything in bread that would touch it. OTOH, there is always the whole vibration of the material. the kitchen aid that V mentioned is a fine machine with many uses and a stainless steel bowl. i made tons of bread in the wilderness of alsaka with nothing but a tupperware bowl and a wood stove. kneading bread is good excercise for giving massages later on! health is lifestyle.

may i suggest spelt flower. it has a fine, delicate flavor and is better for you.
