To all of you out there in internet land , I have recently ( over the past 4 weeks )begun to ferment a combination of fruits & vegetables myself. Inspired by the variety that osumex ...LB179 (this stuff is the real deal , THERE IS NO EQUAL !!)
ferments , I have given it a go , might I add with great sucess. Just about any combo of veggies , fruit or veggies & fruit will work . There are 4 things that I make sure are part of every batch , they are : a bit of ferment from the previous batch ( that I used LB17 as a starter culture ) coconut milk ( an antifungal by natures design wth good fats & sugars) , fresh raw cabbage ...making a point to save a leaf large enough to to cover all my ground up veggies( to trap the gasses of fermentation within the medium of veggies ) at the top of my gallon jar & kosher salt . I wash vigoruosly & breifly dunk my veggies ( accept for the cabbage ) in boiling water to kill of any fungus that might get in the way of the growth of the lactobacillious . I have made it with the veggies & fruit I get from the Wal -mart produce dept. I have put in kale , carrots , apples , cilantro( a great heavy metal chelator) oranges, brocolli,
Celery , uncooked rice , beet powder & lots of fresh ginger . I have been letting the veggies & fruit ferment for a week
at about 75 degrees farenheit for a about 7 days . This seems to be sufficient to produce a ferment that is delicious & definlitley fermented . I have found when I open the jar ( which creates some pressure like a bottle of pepsi ) there is a definite characteristic of carbon dioxide , very sharp similar to sauer kraut but with more kick .

Sugar content you add the the higher the alchohol content will be. With this in mind , dont be to concerned about the alcohol content , I havent caught a " buzz"off it yet. If it would only do me like Jagermeister ....oh MAMA ! I would be in heaven .
But back to my post , I feel like the discovery of fermented veggies has been one of the most important in my life . I have been suffering from digestive issues for years ( constipation , brain fog , cant drink milk ( kinda feels like concrete in my belly ) poor wheat asimilation ( the best way for me to eat it is well done ...I like my toast BURNT! & the very occasional peice of pizza well done ) .
The reason for this is the combo of the perfect storm of mercury toxicity from dental amalgams( which I discovered by a hair analysis) & WAY to many scripts of
Antibiotics ( about 12 of them over 2 yrs )which killed off that precious good flora (LACTOBACILLIOUS & who knows what else , considering they say that we have about 500 microorganisms )in my gut about 14 yrs ago.

So when we dont have lactobacillious , guess what we cant digest ???
LACTOSE !!!! For the simple folks out there , milk ....all milk ....our mothers breast milk contains lactose . So for those of us that were never breast fed as babies , we never got that most important nourishment to our lactobacillious from the beginning !!! And if we were on
Antibiotics as babies , guess what ....there is a good chance that our gut flora was never properly reestblished . So , now I bet your saying to yourself , ' THATS WHY I HAVE NEVER BEEN ABLE TO DRINK MILK !
So now I figured why the dairy based lactobacillious products are not improving my digestive disorders. They contain ........LACTOSE , which I , & I bet a whole bunch of y'all out there in internet land are having some trouble with yourselves.
Since I have been eating the fermented veggies , I take no more laxatives , I can tolerate cheese better ( have not tried milk yet , I am gonna wait a while on that one ) I am much clearer in my thoughts , my energy is improving , no more pain in my right side ( that I thought might be dare I say it , appendicitis ) ,improving sexual function ( the morning wood is waking me up now , errrrrrrr! I DONT NEED THAT THING WAKING ME UP !!) All kidding aside , In TCM healthy sexual function is directly related to the temperature of the small intestine ( which the PH of is acidic when in concert with natures design ) So however we find the way to reestablish our gut flora , make no mistake , with a deficiency if it , we suffer in many ways . So through the health of the gut , we digest , the turbid descends , & the clear ascends , we have enegery , our gut balance assimlates the nutrients from our food more completely which gives ou more & clear energy , & our sexual vitality is much stronger .
