i didn't measure the amounts of each vegetable, as it doesn't really matter. most veggies will work in any amount. i estimate i put 3 parts cabbage to one part burdock, then one whole apple, just a bit of dulse. i used maybe a teaspoon of molasses and a 1/4 teaspoon of salt. this recipe is just me flying by the seat of my pants and experimenting, so you can try different things.

as far as where to put it, you can put it anywhere. the temperature should be relatively constant, tho, so not above the stove or anything like that. the LB17 seems to culture just fine in my basement which is cool. a warmer environment would also be fine i think.

one thing - i have always had a respiratory reaction to fermenting veggies. i think it is the lingering result of severe black mold poisoning i got a while back. so i can't have the veggies in my living area, thats why i put them in the basement, it bothers my lungs to have them in my kitchen. however, someone else may not be bothered at all. so you can have them in the kitchen cupboard if it doesn't bother you, which it probably won't.
