many nuts have anti parasitic toxins in them to protect them from invading fungus/ insects etc.
even the skins of almonds which so many folks eat..
are highly toxic to humans
i am not sure how to deal with walnuts..
but with almonds, the answer is to blanch them in boiling water for maybe 30 sec tops just enough to slide off the brown skin.
then to consume the almonds immediately that day that you blanched.
nuts are often highly fungus and mold laden esp peanuts and peanut butter..,
if you do consume them (walnuts) get them in shell.
then shell only what you intend to eat right then.
since they can go rancid extremely fast inside or outside of the shell.
i myself love pecans and buy them in shells organically grown,
but i still limit intake to very small amts.
if you dont see ingredients on so called *natural* products then dont waste your money.
i bought supposedly organic roasted sunflower seeds
which when they arrived had been roasted with soybean oil 8(
i forgot to read the label and ate a few and almost gagged
on the taste of the soybean oil (not to count the toxicity of it!!)

it maybe that you are experiencing a sensitivity to the natural toxins within that certain nut, or if unshelled then the probabilty of rancid nut is probably the reason.
