My best suggestion is to try for yourself. Potassium and sulfur, for a month or two-three. Sodium is important too, especially if vegan it may be too low. Then re test; and compare with your symptoms, evaluate.
My idea is that when one important element is missing, there may be an accumulation in serum, even tissues; as the element is not absorbed properly.
Similar to when people take loads of calcium for osteoporosis. Their levels of calcium in blood will show normal to high; but due to magnesium deficiency (that shows within range in serum, next to always) the calcium is not absorbed, rather stored in tissues, called calcification.
In one of my jobs, close to the medical industry, I am blessed with the opportunity to observe all this. Even the people on very poor diets, junk, sugar, drugs. To this day no one came very low in potassium, magnesium tests.
