Toxic metals can be a big problem for these people, and research has found that copper, only when toxic can trigger this as well as other toxic minerals. Testing with Trace Elements Inc would be a good start.
My suspicion is that the onset was precipitated by stress in which magnesium plays a key role in nervous system health and its loss is profound in stressful events.
I would have her vitamin D3 levels checked (serum) and see if they are low - vitamin d is implicated in neurological conditions and most people are low.

Vitamin D also plays a key role in both calcium and magnesium levels. Again, Magnesium is probably low due to her stressful events and Americans never get it in diet (at least most do not) - low levels of magnesium will alter the nervous system and stress levels.
