In the early 1960's potassium iodate was used as a dough conditioner in the making of bread and as a result, many people had improved or adequate
Iodine stores. Late in the 1970's into 1980's, bakers replaced the
Iodine with bromate as a dough condition. Both elements are halogens. Bromide unfortunately causes goiters and is carcinogenic. The Japanese consume at least 100 times the USA RDA for iodine. Inorganic
Iodine is safe and effective. The organic iodine that is used in drugs and X-ray dyes is not.

Over the last 2 decades, iodine was replaced by bromine in the bread making process. Bromine blocks thyroid function and may interfere with the anticancer effect of iodine on the breast (4). Now, the risk for
Breast Cancer is 1 in 8 and increasing I % per year (7).
As to "WHY"???
In the 1980s, thanks to "IODOPHOBIA", iodine was replaced with bromine in the bread-making process. (31) Bromide is a goitrogen and interferes with
Iodide utilization by the thyroid gland, (32-34) and possibly by the mammary gland also. (35) Iodine has an anticarcinogenic effect on the breast. (30) The last national nutritional survey showed a trend of decreasing iodine intake by the US population. (30,31) Currently 15% of the US adult female population excreted in their urine less than 0.05 mg iodide/L, a level classified by the World Health Organization (WHO) as iodine deficiency. One must keep in mind that the amounts of daily intake of iodine set by the WHO were recommended with the goal of preventing simple goiter and stupidity (cretinism), not sufficiency of the whole human body for iodine, an amount we estimated to be 100-fold higher than the recommended daily intake. (30) Concurrent with the decreased intake of iodine/iodide and increased intake of bromine in the US population, a trend of increasing prevalence of cancers of the mammary and thyroid glands was reported. Hope this helps :-)
