Curried Dandelion Recipe
Dandelions defend themselves with bitterness. By the time they get ready to flower, most people don’t like them. The leaves are moderately bitter even when they’re at their best, in early spring and late fall. But you'll never know this when you apply Indian cuisine to this common, super-nutritious, easy-to-recognize wild green.
tbs. corn oil, peanut oil, sesame oil, or olive oil
9 cups young common dandelion leaves or other bitter wild or commercial greens
4-1/2 tsp. garlic, chopped
1-1/2 cups water
3/4 cup silken (the softest variety) tofu
2 tbs. mellow (light-colored) miso
1-1/2 tbs. lime juice
1-1/2 tbs. curry powder, or to taste

1. Sauté the common dandelion leaves and garlic in the oil 10 minutes.

2. Meanwhile, puree the remaining ingredients in a blender.

3. Add the puree to the dandelions, bring to a boil, reduce the heat to low, cover, and simmer 10 minutes.
Serves 6

Dandelion Columbo
2 tbs. oil
6 cups dandelion leaves, wild or commercial chicory leaves, or other bitter greens, chopped
1 medium cauliflower, sliced
6 cloves of garlic, chopped
2 small hot chili peppers, seeds and ribs removed, or 1/4 tsp. cayenne hot pepper, or to taste
1 tsp. coriander, ground
1 tsp. turmeric
1 tsp. yellow mustard seeds, ground
1 cup coconut milk
1/2 cup silken tofu, drained
1/4 cup water
1-1/2 tbs. mellow (light-colored) miso
1/2 tsp. rum extract, or 2 tbs. rum or any wild wine or sherry (optional)

1. Sauté the dandelions, cauliflower, garlic, and chili peppers in the peanut oil 10 minutes.

2. Meanwhile, puree the remaining ingredients in a blender.

3. Mix the puree with the sautéed ingredients, bring to a boil, reduce the heat to low, cover, and cook another 10 minutes, or until the cauliflower is tender.
Serves 6

Dandelion Saute Recipe
4 cups chopped dandelion leaves
3 cups chopped onions
3 tablespoons olive oil
2 cups grated wild or commercial carrots
1 tablespoon tamari soy sauce
1 tablespoon of wine.
A few cloves of minced garlic
Optional: Black pepper to taste

1. Sauté the onions in the olive oil.

2. When soft, add the carrots, dandelions, garlic, wine and soy sauce.

3. Cook for 10-20 minutes until all the flavors meld.
Serves 6

Coffee prices set to soar amid fears of a global shortage
Yet soon the biggest concern may not be the cost of coffee but whether there is any available.
Extraordinarily, there is a serious fear the world may temporarily run out of its second-most-traded commodity.
''That's a question I've asked myself many times in the past six months,'' Mr Reynolds said.
''That's the multi, multi, multi trillion dollar question. Nobody can answer that.''

The problem is not increased demand but poor supply.

Environmental impacts have hit crop yields, particularly in Brazil - the largest supplier - and entire crops have failed in other key areas, significantly limiting the availability of coffee.
''They don't expect crop yields or the market to change until after 2013,'' Mr Reynolds said.
''If that's the case, we're facing a couple of pretty difficult years.
"We're seeing some of the big players trying to corner stock in from different places [to avoid running out].''

Importers begin stockpiling

Perth Hills business BioBean is one such importer that has been forced to buy a year and a half's supply of green beans to guarantee stock.
The mother-and-son business is believed to be the only West Australian supplier of coffee which has been certified both organic and free trade status, and owner Mary Ipkendanz said it was becoming increasingly difficult to find the rare blend.
''It's like hen's teeth,'' she said.
The drastic decision to pile up stock would cost thousands in interest payments on a loan needed to purchase the coffee, as well as additional electricity costs to store it correctly.
BioBean already supplies arguably the most expensive coffee in Western Australia but Ms Ipkendanz said last month she was forced to increase the price of two of six lines by 10 per cent.
"[The rising price of coffee] is quite frightening,'' she said. ''[But] the most frightening thing for me is not the increasing cost but having the coffee to roast.''
Ms Ipkendanz said she was only able to avoid even higher costs because her business was home-based.
However, she did not believe cafes could justify significant price rises based only on the increasing price


of coffee, which costs an average 35 cents per cup.


''The price increase for most of the restaurants has probably recently added 3 cents a cup,'' she said.

Mr Reynolds said cafes were also facing increased rent and electricity costs, while the supply of milk was at risk due to the major supermarkets artificially driving down prices to below cost.
He said the combined increases had the potential to send smaller coffee shops bust. However Muzzbuzz would not be slowing down its rate of growth, he said.
Mr Ferrari said he did not expect consumers to relinquish their daily dose of caffeine when prices rose.
''I always take the view, if the coffee's good I'll pay $5 for it,'' he said. ''Where you come unstuck is when people start selling average coffee for $3.80-$4.''
Mr Ferrari warned consumers to be wary of cafes rising their coffee prices too far amid the publicity surrounding the increasing cost of beans.
