Orange flavored buttered beets

* 6 medium-size beets
* 3 tablespoons [45 g] butter
* 1/4 cup [60 mL] orange juice
* 1 teaspoon [5 mL] grated orange rind
* 1/2 teaspoon [2.5 mL] salt



* Rinse beets; boil beets into boiling water, until really soft.
* Peel, then transfer beets into a 12-cup [3-L] casserole.
* Stir in butter, orange juice, grated orange rind and salt.
* Cover casserole.
