Beets


Beets can be delicious, and they are so good for you. Beets have an affinity for citrus and for onions. I used to peel beets, but the skins are so thin, I just cut off thicker top and bottom parts after they are cooked (when I cook them!) And sometimes I add orange peel when I cook the beets.

Beet salad:

1-3 beets, cooked or not
1 Celery stalk, chopped
1/3-1/2 chopped romaine stalk
1/2 medium onion, chopped

Top with vinegar and oil dressing to which juice from 1/2 grapefruit has been added. I do not add other seasonings to this, but you are free to.

Buttered beets:

Cook as many small beets as you want. Cut off tops and peel off any skins you do not want (I just leave them on. While hot, top with a pat or two of butter and a splash of orange juice. Toss and serve.
