3 easy recipes for my sweet tooth
I'm not eating fruit, sugar, honey, mollasas, etc. But every now and then I feel like having something sweet. Here are three sweet treats that are also healthy. Eat very slowly to savor the flavor.
Yogurt Pudding
1/2 cup plain low-fat yogurt, preferably home-made*
2 tablespoons flax seeds, freshly ground
stevia powder to taste
Optional: bit of vanilla and/or cocoa powder
Stir everything together and let it sit a minute so the flax seeds can thicken up the "pudding".
Tahini Spread
Sweeten tahini with stevia powder to taste. Spread on puffed rice cake.
Jicama slices
Slice peeled jicama. Sprinkle with cinnamon and stevia powder. Jicama is a good source of inulin, a pre-biotic -- food for probiotics.
*Home-Made Car Yogurt
Scald 1
quart of organic milk over low heat(scalding is when tiny bubbles form around the edge of the pan). Let temperature come down to 110 deg. F. Stir in 1 teaspoon of fresh, live yogurt. Pour into sterilized
quart jar. Cap. Wrap in a towel and put in your car on a sunny day with the windows rolled up. Leave for a minimum of 8 hours, up to 24 hours for a more sour yogurt with more good lactobacillus beasties. Important note: don't drive anywhere that day. Yogurt doesn't like to be disturbed.
