My sister brought me a Thai Coleslaw recipe tonight. I don’t know who created the original recipe so I can’t give them credit, but we strayed from it quite a bit anyway. Sweet, spicy, and crunchy; it really hit the spot. Here’s what we did more or less……
1 ½ heads cabbage (green and red)- shredded
1+ cup carrots- grated
4 green onions- chopped
½ cup cilantro- chopped
1 large cucumber- chopped
1+ cup peanuts- chopped

The Dressing
½ cup light colored oil
½ cup rice wine vinegar
¾ tsp curry powder
3 Tbs sugar
4 medium cloves garlic- minced
1 jalapeno pepper- seeded and minced
